Ingredients
- 2 kg Lauki (Bottle Gourd)
- 1/4 tsp Red Chili Powder
- 2 pinches Turmeric Powder
- Salt to taste
- 1 tbsp Oil
- 1/2 tsp Cumin Seeds
- 1/2 tsp Coriander Seeds
- 1 inch Ginger (chopped)
- 2 Green Chilies
- 5-6 Garlic Cloves
- 1/4 tsp Asafoetida (Hing)
- 2 Medium-sized Onions (finely chopped)
- 1 tbsp Coriander-Cumin Powder
- 1 tbsp Kashmiri Red Chili Powder
- 1/2 tsp Turmeric Powder
- 2 Tomatoes (grated)
- 1 tsp Dried Fenugreek Leaves (Kasuri Methi)
- 1 tbsp Kitchen King Masala (or Garam Masala)
- 3 tbsp Fresh Cream or Milk Skin
- Water as needed
- Chopped Fresh Coriander for garnish
Step-by-Step Method
- Begin by peeling the Lauki thoroughly. After peeling, wash it and cut it into larger pieces based on your preference.
- In a bowl, add the cut Lauki with 1/4 tsp red chili powder, 2 pinches of turmeric powder, and a pinch of salt. Mix well to coat the Lauki evenly with the spices.
- In a pan, heat 1 tablespoon of oil on high flame. Once hot, add the spiced Lauki and fry for 2 minutes until they get a crispy coating.
- After frying, reduce the flame to medium and cook the Lauki until it is 80-90% soft. While it is cooking, prepare a special masala by grinding together 1/2 tsp cumin seeds, 1/2 tsp coriander seeds, 1 inch chopped ginger, 2 green chilies, and 5-6 garlic cloves in a mixer.
- In another pan, heat 3 tbsp oil and add 1/4 tsp asafoetida. Once the oil is hot, add the ground masala and sauté on low flame for 30-40 seconds.
- Next, add the finely chopped onions and sauté until they soften and change color, approximately 3-4 minutes.
- Lower the flame and add in the dry spices: 1 tbsp coriander-cumin powder, 1 tbsp Kashmiri red chili powder, and 1/2 tsp turmeric powder. Mix well and sauté.
- Add 4-5 tbsp of water and stir continuously until the oil separates from the masala.
- Once the masala is ready, add in the grated tomatoes along with salt to taste. Cook until the water from the tomatoes evaporates completely.
- Check the Lauki, which should now be crispy and soft. If you used fresh Lauki, it cooks faster. If it’s older Lauki, it might take a bit longer to soften.
- Add 1 tsp of dried fenugreek leaves and 1 tbsp of Kitchen King Masala, followed by 3 tbsp of fresh cream (or milk skin). Mix everything well.
- Add the fried Lauki to the masala and toss gently to combine. Pour in some warm water if needed, depending on how thick you prefer the gravy.
- Cover and cook on low-medium heat for about 6-7 minutes, until the Lauki is fully cooked and infused with flavors.
- Finally, add finely chopped coriander and mix well.
